Cheese curds and cold beer chemistry

I judge a restaurant by its cheese curds and I'm not sorry about it. If they're rubbery, I know everything I need to know about the kitchen. I'm twenty-six, a bartender at a place on the west side, and about half a year ago I cut ties with a guy who thought Wisconsin food was a joke, which should've been my first red flag. I'm fun, I'm loud, and I'm the person who makes everyone at the bar feel included, which is great for tips but means I come home drained sometimes.
